Chhatur Barfi/ Sattu ki Barfi
Chhatu or Sattu is often consumed as drink in summer particularly in Bihar and by many Bihari immigrants in Bengal. while making a barfi from Sattu is not very common, I had this barfi once brought home by one of my father’s colleague from Bihar. Oh! my it was so delicious.
It has been a while since I have prepared a dessert at home. While I was craving for a sweet, I decided to prepare some dessert to calm down my craving. Last, week I had prepared some sattu at home. Therefore, the only dessert that came to my mind was sattu ki barfi or chhatur barfi. Moreover, since the sattu is already cooked, these barfis require very less time and effort to prepare.

Making Sattu at home
If you do not have an acess to sattu from market, you can easily prepare it at home. Soak the kalachana for 5-6 hours. Drain the water completely and let it air dry for 1 hour. Now, roast the kalachana on low flame till they are completely dry and turned hard. However, what I have used here is an oven. After drying the chana I have just thrown them in an oven for 2 hours at 100°C. Now, make a fine powder of the roasted chana. Sieve the sattu before using.

Ingredients
- 2 cups of chatu/sattu
- 1½ cup of jaggery/gur
- ½ teaspoon of Cardamom Powder
- 1 cup Ghee/Clarified Butter
- 3 tablespoons of milk powder (optional)
- 1/4 cup of chopped nuts (cashew nuts, pistachios, almonds according to your choice)
Directions
- In a bowl add sattu, ¼ cup warm ghee, ¼ cup milk and mix well. Rub the mixture with the palms till it resembles moist sand. once done cover it and keep aside.
- Take a deep pan to prepare the jaggery syrup. Add 1 cup water, jaggery, and boil till you achieve 2-3 thread consistency.
- While syrup is getting ready, take another pan, heat remaining ghee to it and add the sattu mixture, stir it well continuously for about 2-3 minutes.
- Now add the milk powder to sattu mixture in the pan and mix it well until it mixed evenly.
- Check sugar syrup (check 2-3 thread consistency with little drop of sugar syrup using between thumb and finger). If sugar syrup is done then add into the sattu mixture and mix well.
- Add the cardamom powder and mix again evenly.
- Wait for a while, for the mixture to cool down. Once little cold it will start resembling a dough.
- Now grease a tray with ghee, pour the mixture into the greased thali and spread evenly then sprinkle chopped dry fruits over it, press them lightly with the ladle and allow cooling for 5-6 hours.
- The Barfi is ready, now cut it into the square shapes and serve it.
Step by step instructions to prepare chatur barfi

The Barfi is ready, now cut it into the square shapes and serve it.
