Street style vegetable chowmein/ Vegetable noodles
Hailing from Jalpaiguri, chowmein/noodles was an obligatory post on my blog. Contrary to Kolkata where telebhajas are more popular street food, North Bengal favors chowmein, momo and thukpa. Nevertheless, chowmein is also popular in other parts of West Bengal as well as India. This stir fried chowmein is more of Indo-chinese style. Momo will be coming soon on my page. But for now, I share the recipe of this street style chowmein. You can also add chicken to this dish to prepare chicken chowmein.

Ingredients
- 200 g egg noodles
- 1 capsicum cut in julienne
- 1 carrot cut in thin julienne
- ¼ cup of cabbage thinly sliced
- 1 tablespoon of spring onion bulbs chopped
- 1 teaspoon of grated garlic
- ¼ cup of thinly sliced onions
- 2-3 green chilies chopped
- 3+1 tablespoons of oil
- Salt to taste
- 1 tablespoon of sweet chili sauce
- 2 tablespoons of Soya sauce
- 1 tablespoon of green chili sauce
- 1 teaspoon of vinegar
- 2 tablespoons of spring onion greens for garnishing
Directions
- In a pot, add salt, 1 tablespoon of oil and bring it to boil. Now add the noodles and cook it al dente. Do not overcook the noodles as they will turn mushy.
- Immediately strain the water from the noodles and wash the noodles with cold water. This stops the cooking of the noodles and prevents it from overcooking.
- Keep the noodles aside.
- In a pan or wok add the remaining oil.
- Once the oil is hot add the grated garlic to the oil and saute for 30 seconds on medium flame.
- Then, add the chopped spring onion bulbs and continue sautéing for another minute.
- Add the capsicum, carrot, onion, cabbage and green chilies and continue sautéing till the veggies are cooked through.
- In a bowl, mix the soya sauce, green chili sauce, vinegar and sweet chili sauce and mix well.
- Add this mixture to the kadai and adjust the salt as per your taste. [Remember soya sauce has salt in it. Also you have added salt while boiling the noodles. So you will require very less salt if you need at all]
- Mix the sauce with all the vegetables and add the boiled noodles to the kadai.
- Mix the noodles with the veggies and sauce on low flame. You can use two spoons for mixing.
- Turn off the flame.
- Garnish the noodles with spring onion greens and serve them hot.
Step by step instructions to prepare chowmein
