Besan k Ladoo

Besan K ladoo is a popular dessert in India . It is made from chickpea flour or besan and ghee or clarified butter as the primary ingredient. The addition of dry fruits make the ladoos richer and perfect for the winter. You can add any dry fruit of your choice or even raisins or kishmish to the ladoos. It is easy to prepare with a few tips and tricks that you need to remember which is mentioned below

Tips and tricks to prepare besan k ladoo

  1. prepare the ladoos in pure desi ghee for best results.
  2. Add the powdered sugar to the besan only after the besan cools down completely. Else the sugar will start melting and the besan mixture will become thin making it difficult to prepare the ladoos.
  3. While preparing the ladoos if you feel that the mixture is too dry, add some more ghee to the mixture.
  4. However, if the mixture becomes very thin, keep it in refrigerator for few minutes for the ghee to solidify. This will help in preparing the ladoos.

Ingredients

  • 1 ½ cup of besan/chickpea flour
  • 1/3 to ½ cup of ghee
  • 2/3 cup of powdered sugar
  • 1 teaspoon of cardamom powder
  • 8-10 cashew nuts blanched and chopped or any other dry fruit of your choice
  • 4-5 pistachios chopped for garnishing

Directions

  1. Take the besan or chickpea flour in a pan and dry roast them with continuous stirring on a low flame till the raw smell of besan disappears.( for about 8-10 minutes)
  2. Now, add about 1/3 cup of ghee to the pan and mix it properly with the besan.
  3. Continue roasting the besan for about 30 minutes on a low flame till you see the color of the besan change from golden to light brown.
  4. Turn off the flame and continue stirring else the besan will start burning at the bottom.
  5. Add the chopped cashew nuts and cardamom powder to the besan mixture.
  6. Let the besan cool down completely and then add the powdered sugar.
  7. Mix the sugar properly with besan mixture. At this point if you feel that your mixture is too dry, add some more ghee. But if you feel that it is too moist to form the ladoos keep it in refrigerator for few minutes and the ghee will solidify helping you to prepare the ladoos.
  8. Now, start preparing balls. Your besan k ladoo is ready.
  9. You can store them in airitight container for couple of months.
  10. Garnish with chopped pistachios and serve.

Step by step instructions to prepare besan k ladoo
