Sim beguner sorse bata die chochori/ Flat bean and eggplant in mustard sauce
Chochori …. is a mishmash of vegetables popular and unique in Bengali cuisine. As you understand since it is a mixture of vegetables, it is high on nutritional value. At this time of the year, many different vegetables are available, so you can prepare different wonderful chochoris . The recipe of this chochori is from my mother’s kitchen. When I was a child, my mother used to prepare this chochori often at home. So, thought of remembering my childhood by preparing the dish at home.
This chochori is prepared in mustard sauce and hence I prefer using mustard oil for cooking to any other oil. This increases the quotient of pungency in the dish. However, if this is too much for you you can replace the mustard oil with any other non-smelling cooking oil.

Ingredients
- 400 grams of sim/flat bean
- 1 small begun/eggplant
- 1 potato
- 1 tablespoon of black mustard seeds
- 1 tablespoon of white mustard seeds
- Salt to taste
- 2-3 green chilies slit
- 2 tablespoons of mustard oil
- 1 teaspoon of kalojeera/nigella seeds
Directions
- Soak the mustard seeds in water and make a paste of mustard seeds along with 1 teaspoon of salt and green chilies.
- Chop the sim or flat beans to about 1 cm in thickness.
- Cut the eggplant and potatoes to cubes and keep aside.
- In a pan/kadai heat the oil. Once the oil is hot add the kalojeera or nigella seeds.
- As the kalojeera starts spluttering add the potatoes and saute them.
- Now, add the eggplant and the sim/flat beans and continue sauteing.
- Add the turmeric, about ½ cup of water and cook the vegetables covered.
- As the vegetables are cooked properly, add the mustard paste and mix them properly.
- Cook the vegetables in mustard sauce for about 5 more minutes.
- Turn off the flame and your chochori is ready to serve.
- Serve the chochori with steamed rice and daal.
Step by step instructions to prepare sim beguner chochori
