Gajar Ka Halwa or Carrot Halwa
Gajar Ka Halwa is a traditional, rich and decadent, slow-cooked dessert. However, these days when we are always in short of time I present this recipe where gajar ka halwa can be prepared in very short time without compensating with the taste. It is prepared specially in winter when fresh carrots are available. Gajar ka Halwa is mostly served warm but it also tastes amazing when served chilled.

Ingredients
- 5 carrots or 3 cups of carrots grated
- 2 tablespoons of condensed milk
- 1 tablespoon of ghee
- 1 ½ cup of full fat milk
- 2 tablespoons of sugar
- 10-12 raisins soaked in water
- 10-12 cashew nuts blanched and chopped
- ½ teaspoon of cardamom powder
Directions
- Wash the carrots slightly peel and grate them.
- In a kadai/pot add the ghee. As the ghee melts add the grated carrots and lightly saute them for around 2 minutes.
- Now, add the milk and cook the carrots covered till all the carrots are cooked properly and they start breaking down.
- Keep stirring in between else the milk will start scorching at the bottom.
- Towards the end add the sugar, raisins, 2/3 of chopped cashew nuts and the condensed milk and cardamom powder and continue stirring till all the milk is evaporated.
- After all the milk is evaporated turn off the flame.
- Garnish with remaining chopped cashew nuts and serve warm. You can also freeze the gajar halwa and serve chilled.
Step by step instructions to prepare gajar ka halwa
