Bhapa Doi (Baked Yogurt)

Bhapa doi or baked yogurt is a traditional bengali dessert. It requires very few ingredients and also takes very little time to prepare. So, next time whenever you have guests at your home, prepare this dessert for them and get all the praises from them.

Ingredients

  • 1 cup of hung curd/ greek yogurt
  • 1 cup of condensed milk
  • ¼ tablespoon of rosewater
  • Chopped pistachio
  • Few strands of Kesar/Zafran
  • Soaked raisins
  • Chopped pistachios for garnish

Directions

  1. Take 1 cup of hung curd/ Greek yogurt
  2. To it add 1 cup of sweetened condensed milk.
  3.  Whisk it properly to uniform mixture such that there are no lumps.
  4. To the mixture add soaked raisins, rose water and chopped pistachios
  5.  Pour the mixture in equal proportions in a ramekin/ silicone mold/ceramic bowl (whatever available).
  6.  Add the kesar and pistachios to garnish.
  7.  Bake at 175°C or steam on gas till toothpick comes out clean. (for about 30 minutes). You can also put it just in a ceramic bowl and cover it with aluminium foil for steaming on gas.
  8.  Store in refrigerator for at least 2 hours.
  9.  Serve chilled.

Notes

  • The curd should not be sour.
  • The mixture should be whisked well.
  • If Greek yogurt is not available, hung curd can be prepared by hanging curd in a muslin cloth to remove excess water. This gives best results.

Variations

You can serve this dessert with any fruit compote. Here I have used apricot, a seasonal fruit.
